Salmon Sashimi and Salmon Tartar with Crisy Skin
Serves 4 as part of a sushi meal
12 pieces of salmon sashimi and 1 salmon tartar
1/4 side salmon, approximately xxx grams
1/2 portion of mooli salad
20 ml. yuzu mayonnaise
5 ml. mirin
5 ml. light soy sauce
freshly ground salt and pepper
1/4 cucumber finely chopped
20 grams spring onions
5 grams black and white sesame seeds
handful coriander leaves
Trim the skin off the salmon fillet
Trim the salmon skin of the fillet, scrap all the brown meat of the skin.
